Hotham are looking for a hospitality expert to assist the Senior Hospitality & Property Manager in running the Food and Beverage outlets. You will provide direction and leadership of all food and beverage operations, including staff kitchens to achieve corporate objectives, budgeted revenue, profit targets while meeting guests’ expectations in the quality of goods and services and food safe compliant operations.

In a typical day in this role, you might:

  • Manage the maintenance and implementation of all Food and Beverage systems (including POS and Inventory Management). Liaise closely with Managers, IT and Finance to ensure systems are being optimised to ensure operational efficiency
  • With contribution from the Vail Resorts Australia Hospitality Team, work with the Head Chef to plan and cost menus, create menu cards to ensure consistency across operations and ensure the best price is obtained for purchase of supplies, liquor and food items
  • Maintain and foster relationships with key suppliers, industry associations and other resorts and organisations relevant to the effective functioning of the department
  • Familiarise newly hired staff with work practices in food handling and serving, cashiering, table clearing and in conjunction with the Human Resources department ensure supervisors and all employees are provided with relevant customer service and systems training

To be considered for this role, you should have:

  • Tertiary studies in hospitality management or commercial cookery.
  • Qualifications or extensive experience in a tourism related field
  • 1 years+ food and beverage related experience
  • Must hold and maintain current liquor licence training and RSA

Employment start dates will vary depending on the role and snow conditions, but most roles start in June and finish in late September.
